I have never been a fan of avocados, but they boast a number of health benefits so I have found ways to enjoy them.  The health benefits of avocados include heart health support, anti-inflammatory effects, blood sugar stabilization, and prevention of certain forms of cancer. Today I would like to share with you my favorite way to enjoy avocados – in a Raspberry Avocado Smoothie.  I am used to doing live cooking demonstrations, but this is my first attempt at a demo on video. Raspberry Avocado Smoothie

1 avocado, peeled and pitted
3/4 cup orange juice
3/4 cup raspberry or cranberry juice
1/2 cup frozen raspberries (not thawed)

Puree all ingredients thoroughly in a blender or VitaMix and enjoy!

Notes: This recipe as listed above tends to come out rather thick, more like a dessert (which I forgot when I started the video!). If you want to enjoy it as a smoothie, you can double the amount of juice listed above. We have also tried freezing the original thick recipe in popsicle molds, and the kids absolutely love these frozen treats!

Also, I recommend using 100% juice which does not have added sugar and calories. If you find that the raspberries are a bit tart for your taste, you can sweeten it up a bit with a touch of stevia.
